For this photoshoot we were at The Hide, a truly unique property just near Perranporth here in Cornwall. For this recipe I wanted a tranquil and calming location to emulate how eating this cake makes you feel… The Hide certainly didn’t disappoint.
For this recipe we were lucky enough to be baking in "Firefly" a traditional, woodcutters hut, transformed into a luxury haven, hidden away in the heart of the Cornish countryside. The beautifully rustic interiors are built with natural materials, curious trinkets and an overwhelming sense of style and luxury. As we drove through the meandering back-roads and approached the property immersed in rural charm it felt like we were on the set of a Modern day western! For this shoot we selected some key props from the beautifully eclectic MMW, a boutique fashion and homeware store in Newquay.
Last week I was lucky enough to visit the beautiful Scorrier House and it’s surrounding grounds, which happen to be the venue for this weekends Great Estate Festival. The recipe I’m baking is for torta do Santiago which a super light flourless almond sponge cake with the fresh flavours of lemon & orange and is also free from gluten and dairy. The beautiful stately home “Scorrier House” has its very own orangery where I had the privilege of picking some of their home grown fruit to use in my recipe.
Similar to my coconut macaroons, my orange & almond amaretti biscuits are simple and easy to make and keep really well in a Kilner jar...if they last that long! Its the penultimate day before New Years Eve so I thought now was the perfect time to share my long awaited sausage roll recipe. I bake these every Saturday morning for the cafe as they make a great mid morning snack with a coffee, but when shrunk into bitesize finger food they become the perfect accompaniment to your new years cocktails. I’ve also got a really simple recipe for adding a festive twist to your favourite bubbles to clink and cheers as the clock strikes 12!
The twelfth month is upon us and with just one week to go before Christmas Eve I'm sharing my most festive recipe, a twist on a traditional Christmas treat The Minced Pie.
